Healthy Pancakes

HEALTHY PANCAKES (ONLY 3 INGREDIENTS AND KID-APPROVED)

INGREDIENTS:

1 cup of blended (finely) rolled oats

1 ripe banana

1/2 cup of pure coconut water (use more if you like your pancakes a little thinner)

You can also double the recipe. These pancakes are light and guilt-free.

DIRECTIONS:

  • 1 cup of oats into a high-speed blender (I use Vitamix) and blend on high for until oats are a fine flour consistency.  (You can also buy Oat Flour )
  • Add banana and coconut water to the blender with the oat flour. Blend till smooth.
  • Lightly spray olive oil onto a nonstick pan set to low/ medium heat
  • Use a spoon and scoop small scoops of batter onto the pan. (I do slightly more than a tablespoon)
  • When bubbles begin to form, and the batter slightly plumps and solidifies (approx.1-2 minutes) flip the pancake and cook for approx. another minute.
  • Take off the pan and enjoy with your favorite toppings, syrup, or nut butter.
