Salsa Shredded Chicken – Throw and Go

INGREDIENTS

  • 2-4 boneless, skinless chicken breasts
  • 1 jar of your favorite salsa
  • Garlic powder (1 tablespoon or about 2-3 small cloves of fresh garlic minced)
  • Salt and cracked pepper

  • (optional): Ranch seasoning powder mix-  approx. a half tablespoon or even just a few shakes for some extra flavor prior to cooking
  • (optional) Franks hot sauce- a few shakes into the pot prior to cooking
  • (optional) Cream cheese approx. 3 tablespoons or globs on the top while it cooks

*shredded cheese (any variety) on top while eating*

Directions:

  1. This is the easiest recipe you will ever make
  2. Place the chicken breasts in the crockpot
  3. Pour the jar of salsa over it
  4. Sprinkle garlic powder on top (if using fresh chopped or minced garlic simply add alongside chicken in the pot)

        Add any additional spices or cheese on the top

Cook it on high for about 3-4 hours. *** Probably could do less but I don’t like raw chicken J

The chicken will literally shred once done.  I always had some of the broth or salsa from the pot to keep the chicken from getting dry.

Tip: As you shred chicken ladle the broth or salsa so as to not make it soupy but so it absorbs into the chicken

Serve:

Put in taco shells, serve over rice, in a burrito, or for a healthier version on top of spaghetti squash, cauliflower rice or place on top of a salad.  Honestly, the possibilities are endless.
