Mediterranean Style Potato Salad with Sundried Tomatoes and Capers (No Mayo)

Inspired by my grandmother (Siti- Syrian for grandmother)

This potato salad is healthy, nutritious, and a true crowd-pleaser.

Every time I make it- I get requests for the recipe.

It is so easy and can be made in under 10 minutes.

Can be eaten warm, cold, or just straight out of the mixing bowl with your fork!

Ingredients:

6 Small/Medium creamy potatoes (Yukon works) (approx.15-20 oz of potatoes)- Chopped in chunks or quarters – Sometimes I use this trinity mix of bite-sized creamy purple, yellow, and white potatoes. Wash and boil (approx.10-13 minutes until fork tender- Not too much because you don’t want mushy potato salad.

1 Tablespoon of Dijon Mustard

1 Tablespoon Capers (I add a drip of the liquid too)

5-6 Sundried tomatoes in oil –chopped finely

½-1 Lemon squeezed        

1 Tablespoon Extra Virgin Olive Oil

Salt and Pepper – I use a grinder, so I just grind to taste

1 Shallot – chopped finely.

Fresh bunch of chives- chopped finely

1 Tablespoon nutritional yeast

*Sometimes I had already steamed broccoli to it (chopped)and it is delicious

*If you like kalamata olives add these as well for some added salt and color

*Can sub potatoes for chickpeas/garbanzo beans or even just add chickpeas with the potatoes and trust me it is extraordinary.  If just using the beans- you will need to lessen some of the amounts of the ingredients used for the dressing as it will be too much dressing.

* My husband adds tuna fish and at tad bit more olive oil (another tablespoon) to this and mixes it up all up for added protein.

Instructions:

Wash and quarter potatoes

Boil until fork tender – 10-13 minutes- (I always add sea salt to my boiling water)

Strain potatoes and quickly rinse in cold water to stop the cooking process.

Put potatoes in a bowl and add all the ingredients above.

Stir it all up gently with a spoon.

Honestly, you will thank me. This potato salad is the best and it is super healthy.
