Lazy Chicken Soup (courtesy of my Momma)
Looking for an easy, fast, and semi-homemade chicken soup recipe that any novice chef can make?
It is a family favorite!
Ingredients:
· Rotisserie Chicken shredded or chopped (as much or as little as you want 😊) i.e. the lemon pepper one is especially delicious
· 1 teaspoons cracked pepper
· 1 tablespoon olive oil
· 2-3 small garlic cloves, minced finely
· 6 cups chicken broth (I prefer chicken bouillon cubes, 1 cube= 1 cup)
· 2-3 celery ribs, chopped (peel the celery so you get the harder strings off)
· 2-3 medium carrots, chopped
· 2 tablespoons of parmesan cheese
· 1/3 cup uncooked small pasta noodle (i.e. abc shape/stars/ or dilenti kind) Hint: When using pasta, always cook separately. Drain. Mix into soup once vegetables are cooked thoroughly.
- Lighter version (substitute rice): 1 small handful of short grain rice
Directions:
- Sauté minced garlic and olive oil in the stock pot
- Add water and bring to a boil
- Add bouillon cubes
- Add the carrots and the celery into the pot
- Reduce medium-low heat (small boil)
- Add pasta (I use small pasta so it cooks rather quickly)
- Meanwhile, separate chicken meat from skin and bones; reserve meat.
- Add as much chicken as you wish into pot
- Cook until pasta is fully cooked.
- Add parmesan cheese (I really don’t measure this I just sprinkle into pot and stir)
In our family we add a little extra parmesan cheese when serving. Who doesn’t love cheese?!?
